Enzyme engineering is a field of biotechnology that involves the modification of enzymes or proteins to improve their properties or create new functions.  In this workshop, the activity of the enzyme α-amylase will be followed from its production to its purification by various methods such as precipitation and chromatographic methods like exclusion chromatography. A purification evaluation is necessary to monitor progress in the purification of this enzyme, followed by the determination of physicochemical parameters and finally the study of enzyme kinetics.
